Although the date of the first beginning of this tradition is not known, it is understood that the history of the documents and the information has gone down to the depth of history. It is the most important factors in the emergence of this tradition because of the presence of provinces with herbaceous cheese, the similarity of the vegetation, the livelihood of the region based on animal husbandry, the living conditions of harsh climate and the lack of transportation facilities. In the beginning, it is said that the herbaceous cheese was prepared by a physician for the treatment of some diseases of the local people. Later on, the folk adopted the herbs and made them an indispensable food of their tables.
